Chinook Salmon

Also known as the Spring Salmon or King Salmon, the Chinook is the largest of the Pacific salmon species. No other salmon is as widely sought after as the mighty Spring Salmon. This fish can present itself in one of two ways; a white spring or a red spring. The meat of the fish is either white or red in color. Key identifiers of this fish are its spotted tail and back.

Coho Salmon

Also known as the silver salmon, the coho are by far the wildest fighting salmon of all the species. These fish strike with a fury and have a tendency to dance all over the ocean. Coho can be identified by their bright silver color and black gums.
Average size: 2 - 30 lbs or 0.9 - 14 kg |
Sockeye Salmon

|
Sockeye salmon yield the best meat for canning. The meat color is crimson red and rich with flavour. The key identifies of this fish are its translucent green head and back.
Average size: 5 - 7 lbs or 2.2 - 3 kg |
Pink Salmon

|
The most common species of salmon, pinks, also known as a humpy or razor back because of their enlarged and peaked backs. Pink salmon make an excellent smoking fish. Key identifiers of this fish are it's humped back and significantly smaller scales.

Chum Salmon

Also known as the dog salmon, the chum is very similar to the Sockeye salmon but with a longer body length. Key identifiers of this fish are it's obvious hooked nose, and emerald green head and back.
Average size: 12 - 24 lbs. or 5.5 - 11 kg |
Halibut

|
Halibut are the official white meat of the Pacific. The bottom fish can grow to be as large as a sheet of plywood and sometimes up to 12" thick. White on the bottom and marbled brown on top, these fish have both of their eyes on one side of their body.
Jigging is the popular method for catching these species.
Average size: 20 - 60 lbs (up to 250+) or 9 - 25 kg |
Ling Cod

A very prehistoric rock fish, the Ling cod is very impressive displaying razor sharp teeth and a mouth that can grow 3-4 times in size, enabling this fish to swallow its prey whole. This white fish is very delicate in taste. A true delicacy.
Average size: 8 - 15 lbs or 3.5 - 7 kg

Dungeness Crab

The most popular crab shellfish in Southern BC, the dungeness crab is a very tasty treat.
